1½ litres (6 cups) water
185g jar pho soup paste
2 x 200g chicken breasts, trimmed, thinly sliced
200g packet pad Thai rice noodles
1¹∕³ cups shredded carrot
1 cup fresh bean sprouts, trimmed
1 cup fresh coriander leaves
¹∕³ cup sliced fresh mint
Lime wedges, to serve
Bring water to a boil in a large saucepan. Stir in pho paste until combined. Add chicken. Simmer for about 4 minutes, or until chicken is just cooked. Remove.
Meanwhile, prepare noodles according packet directions.
Divide noodles among serving bowls. Add ¹∕³ cup shredded carrot to each bowl. Top with sprouts. Spoon over chicken mixture. Top with combined coriander and mint.
Serve with lime wedges.
