Quick & Easy Lemon Cheesecake Parfait

Quick & Easy Lemon Cheesecake Parfait

TIP! Parfaits can be made up to two days ahead. For a change, replace lemon with lime. Finely grate the rind from lime and use only 1 tablespoon of the juice as it has a more intense flavour than the lemon.     

Ingredients

1 lemon

250g packet cream cheese, at room temperature, chopped

2/3 cup icing sugar mixture

300ml tub thickened cream, whipped

6 vanilla cream wafers (40g), thinly sliced 

Method

  1. Finely grate 2 teaspoons rind from lemon. Cut lemon in half and squeeze the juice. You will need bout ¼ cup.  

  2. Place cream cheese and icing sugar in a food processor. Process until smooth. Add rind and juice. Process until combined. 

  3. Transfer mixture to a large bowl. Whisk in whipped cream until firm peaks firm.

  4. Spoon evenly into six serving glasses (1-cup capacity). Cover. Refrigerate overnight.

  5. Just before serving, sprinkle with wafers.
