Ingredients
500 g peaches, halved, stones removed
Juice of 1 small lemon (you will need ¼ cup juice)
½ cup fresh passionfruit pulp
750 g jam sugar
Method
- Roughly chop peaches and put in a large heatproof bowl. Add lemon juice and passionfruit pulp. Microwave on high/100%, stirring every 2 minutes, for 10 minutes or until fruit is soft.
- Add jam sugar and stir until combined. Microwave on high/100% for 20 minutes or until jam reaches setting point.
- To test setting point, put 1 tbsp cold water on a saucer and put in the freezer for 5 minutes. Add 2 tsp of the jam to chilled water and run your finger through middle. If jam separates, forming a canal, and stays in that position, it is ready. If it’s a little soft, cook for longer, 1 minute at a time, until correct consistency.
- Spoon hot jam among sterilised jars. Secure lids tightly and store peach and passionfruit jam in the fridge or a cool dark cupboard for up to 3 months.
