750g packet frozen potato wedges
2 tblsps olive oil
1 large onion, finely chopped
1 medium red capsicum, finely chopped
2 cloves garlic, crushed
300g packet frozen Quorn Mince
40g sachet chilli con carne recipe base
400g can chopped tomatoes
400g can kidney beans, drained, rinsed
Sour cream and chopped avocado, to serve
Cook potato wedges according to packet directions.
Meanwhile, heat oil in a large, non-stick frying pan over a medium to high heat. Add onion, capsicum and garlic. Cook, stirring occasionally, for about 3 minutes or until soft.
Add Quorn, recipe base, tomatoes, beans and 1 cup water. Stir to combine. Bring to boil. Simmer, stirring occasionally, for about 6 minutes, or until slightly thickened. Remove.
Serve with potato wedges, sour cream and avocado.
