Rainbow chicken salad
Cook: 15 Minutes - easy - Serves 4 - nut-free - egg-free - pregnancy-safe

This salad is perfect for the kids to arrange, simply prepare all the ingredients and pop it onto a platter.

Ingredients

1 large barbecued chicken cut into portions

250 g mixed salad leaves

2 sliced avocados

2 cup mixed berries

2 tbsp balsamic glaze

1 loaf garlic bread to serve

Method

  1. Cut or break a large barbecued chicken into serving portions (such as the thigh, drumstick, wing and breast).
  2. Place 250g mixed salad leaves onto a platter, top with 2 sliced avocados and 2 cups mixed berries. Top with chicken pieces, drizzle with balsamic glaze.
  3. Serve with warmed garlic bread if desired.
