Red cabbage, lettuce and apple salad
Cook: 25 Minutes - Serves 6 - Vegetarian - Vegan - gluten-free - nut-free - dairy-free - egg-free - pregnancy-safe

A crispy, light and fruity cabbage and apple salad that makes a lovely side. It's a great option to serve when heavier dishes are on the menu, like Christmas.

Ingredients

1 baby cos lettuce

1 medium red apple, quartered, cored, thinly sliced

2 tbsp lemon juice

1 medium carrot, peeled, coarsely grated

300 g red cabbage, trimmed, shredded

150 g snow peas, trimmed, thickly sliced

Dressing

¼ cup olive oil

2 tbsp white wine vinegar

2 tsp wholegrain mustard

Method

  1. To make dressing, whisk all ingredients in a small jug until combined.
  2. Cut lettuce crossways into 1cm slices. Transfer to a large bowl. Place apple in a small bowl. Add juice. Toss to coat.
  3. Add apple to lettuce with carrot, cabbage and snow peas. Drizzle with dressing. Toss to combine.
  4. Transfer to a serving plate.
