1 baby cos lettuce
1 medium red apple, quartered, cored, thinly sliced
2 tbsp lemon juice
1 medium carrot, peeled, coarsely grated
300 g red cabbage, trimmed, shredded
150 g snow peas, trimmed, thickly sliced
¼ cup olive oil
2 tbsp white wine vinegar
2 tsp wholegrain mustard
- To make dressing, whisk all ingredients in a small jug until combined.
- Cut lettuce crossways into 1cm slices. Transfer to a large bowl. Place apple in a small bowl. Add juice. Toss to coat.
- Add apple to lettuce with carrot, cabbage and snow peas. Drizzle with dressing. Toss to combine.
- Transfer to a serving plate.
