1 cup red rice
300 g jar marinated feta in oil
250 g packet rainbow salad
100 g baby rocket leaves
½ cup currants
Balsamic vinegar, to serve
- Rinse rice well. Drain. Place in a large saucepan with 2 2/3 cups cold water. Cover. Bring to boil. Simmer, covered, for about 35 minutes, or until tender. Remove from heat. Stand, covered, for 5 minutes. Transfer to a large bowl. Cool slightly.
- Drain feta, reserving 2 tbsp of the oil. Add feta and oil to rice with salad, rocket and currants. Season with salt and pepper. Toss to combine.
- Serve drizzled with vinegar.
