250 g butter, melted
1 cup caster sugar
1 teaspoon vanilla extract
¼ cup cocoa powder
1 tablespoon red food colouring
1 teaspoon white vinegar
2 eggs, lightly beaten
¾ cup plain flour
Cream Cheese Frosting
125 g cream cheese, at room temperature
30 g softened butter
¾ cup icing sugar mixture
½ teaspoon vanilla extract
A few drops of pink food colouring
- Preheat oven to 180°C (160°C fan forced). Line a 16 x 26cm slice pan. In a bowl, stir together butter and sugar. Add vanilla and cocoa powder and mix to combine. Add the food colouring, vinegar, eggs and flour and mix well. Pour mixture into prepared pan.
- Bake for 30 min until cooked when tested with a skewer. Allow brownie to cool before icing with Cream Cheese Frosting. Cut into squares to serve. Decorate with white chocolate curls if desired.
- Beat 125g room temperature cream cheese and 30g softened butter until smooth. Gradually beat in ¾ cup icing sugar mixture, ½ teaspoon vanilla extract and a few drops of pink food colouring. Beat until combined.
