500g head broccoli
1 cup finely grated parmesan (85g)
½ cup panko breadcrumbs
3 cloves garlic, crushed
¼ cup olive oil
Cut broccoli into large florets, you’ll need about 300g. Spread over an oven tray lined with baking paper.
Combine parmesan, breadcrumbs, garlic and oil in a medium bowl. Mix well. Season with salt and pepper. Sprinkle over broccoli.
Cook in a hot oven (200C) for about 15 minutes, or until broccoli is tender and crumbs are golden brown and crisp. Serve.
