These roasted sweet potatoes are the easiest way to get your hot chip need - and taste even better too!
1.5 kg sweet potato
2 tbsp olive oil
1 tsp ground cinnamon
2 tbsp honey
2 fresh long red chillies, deseeded and finely chopped
Salt and pepper, to taste
Coarsely chopped chives, to garnish
- Peel sweet potato. Cut into 7cm wedges. Combine in a bowl with oil, cinnamon, honey and chillies. Toss gently to coat.
- Arrange sweet potato in a single layer in a large roasting pan. Season with salt and pepper.
- Cook in a moderate oven (180C) for about 50 minutes, turning regularly, or until tender.
- Serve sweet potato garnished with chives and sprinkle with salt.
