1 kg sweet potato, scrubbed, washed
2 tbsp olive oil
2 cloves garlic, crushed
Cracked black pepper, to taste
Chilli lime salt
2 tbsp sea salt flakes
2 tbsp finely chopped fresh parsley
2 tsp finely grated lime rind
½ tsp dried chilli flakes
- Cut potato into 2cm rounds. Place in a large bowl with combined oil and garlic. Season with pepper. Toss to coat. Arrange in a single layer in a large, oiled roasting pan.
- Cook in a hot oven (200C), turning halfway through, for about 35 minutes, or until golden brown and tender.
- Meanwhile, to make salt, combine all ingredients in a small bowl.
- Serve salt sprinkled over hot potato.
