½ cup white sugar
1 cup sweet rose wine
¼ small seedless watermelon (1.25 kg), peeled, coarsely chopped
250 g fresh strawberries, hulled, chopped
- Stir the sugar and rosé in a small saucepan over low heat until the sugar dissolves. Increase heat to high. Cook, without stirring, for 3 minutes or until the syrup thickens slightly. Set aside to cool.
- Meanwhile, blend or process the watermelon and strawberries together until smooth. Strain through a fine sieve into a jug. Add the rose sugar syrup. Pour into 12x125ml (1/2 cup capacity) popsicles moulds. Insert the sticks, freeze overnight.
