2 kg kipfler potatoes, washed, cut into 3cm rounds
½ cup finely chopped fresh sage leaves
3 cloves garlic, crushed
2 tsp finely grated lemon rind
¼ cup lemon juice
Salt and pepper, to taste
⅓ cup vegetable oil
- Boil, steam or microwave potatoes until just tender. Drain. Place into a large bowl with sage, garlic, rind and juice. Season with salt and pepper. Toss to coat.
- Heat oil in a large roasting pan in a hot oven (200C) for 10 minutes. Remove. Carefully add potatoes to hot oil, turn to coat.
- Return pan to same hot oven (200C). Cook for about 30 to 35 minutes, turning twice, or until golden and crisp.
- Serve hot potatoes with salt and pepper.
