A simple wing recipe with only salt and pepper seasoning and a light Asian dressing on the side.

Ingredients

1.5 kg chicken wings

1 tbsp ginger finely chopped

1 tbsp garlic finely chopped

2 tbsp light soy sauce (or gluten-free alternative)

2 tbsp mirin

Method

  1. Preheat oven to 200°C (180°C fan forced). Line a large baking tray with baking paper. Remove and discard tips from wings then cut each wing at the joint. Season chicken all over with salt and ground black pepper. Arrange in a single layer on the tray and bake for 40 min, turning once during cooking.
  2. Meanwhile, in a large bowl, combine chopped ginger and garlic, light soy sauce and mirin. Place the cooked wings into the bowl with the dressing and toss to coat. Serve with cooked rice or noodles. Garnish
with chopped spring/green onions.
