Ingredients
8 mixed grill sausages
1 onion, sliced
6 slices hot or mild salami, chopped
2 garlic cloves, crushed
2 tsp smoked paprika
500 g jar tomato pasta sauce
1½ cups chicken stock
3 cups chunky-style frozen mixed vegetables
Method
- Heat a large deep frying pan over medium-high heat and spray with oil. Cook sausages for 5-6 min until browned. Remove and cut into bite-size pieces. Set aside.
- Add the onion and salami to pan and cook for 5 min until onion is soft. Add garlic and paprika and cook 1 min. Add pasta sauce and stock and bring to a boil. Return sausages to pan and simmer over a medium-low heat for 10 min.
- Add vegetables and cook for a further 10 min. Season to taste. Serve with cooked couscous or fresh crusty bread. Garnish with chopped fresh parsley.
