Sausages with pesto mash

Sausages with pesto mash
Prep: 5 Minutes - Cook: 30 Minutes - easy - Serves 2

Liven up your midweek meal by adding a generous dollop of pesto to standard sausage and mash.

Ingredients

3 large white potatoes, peeled

olive oil, for frying

4 pork sausages

200g cherry tomatoes on the vine

½ tub fresh pesto

Method

  1. Quarter the potatoes, then cook in a large pan of salted, boiling water for 15 mins. Drain and set aside.

  2. Heat a glug of olive oil in a large frying pan over a medium heat. Cook the sausages for 15 mins, adding the tomatoes to the pan for the final 5 mins. Mash the potatoes well, then stir in the pesto. Season and serve alongside the sausages and tomatoes.
