Ingredients
3 large white potatoes, peeled
olive oil, for frying
4 pork sausages
200g cherry tomatoes on the vine
½ tub fresh pesto
Method

Quarter the potatoes, then cook in a large pan of salted, boiling water for 15 mins. Drain and set aside.

Heat a glug of olive oil in a large frying pan over a medium heat. Cook the sausages for 15 mins, adding the tomatoes to the pan for the final 5 mins. Mash the potatoes well, then stir in the pesto. Season and serve alongside the sausages and tomatoes.
