150 g butter, softened
1⅓ cups plain flour
¼ cup soft icing sugar mixture
¼ cup hazelnut meal
¼ cup chocolate hazelnut spread
- Line two baking trays with baking paper. Beat butter until light and creamy in colour. Add egg, flour, icing sugar mixture and hazelnut meal. Mix until combined.
- Divide into two portions and flatten each between two sheets of baking paper. Chill for 15 min.
- Preheat oven to 180°C (160°C fan forced). Roll one portion of dough to about 5mm thick. Cut into star shapes using a 4cm cutter. Transfer to lined baking trays.
- Bake for 12-15 min, allow to cool. Repeat with the second dough portion, and re-roll any leftover dough to make more cookies. Lay half the stars flat, spread with a little chocolate hazelnut spread and place the remaining stars on top, twisting slightly. Dust with icing sugar to serve.
