1.5 kg piece of corned beef silverside
1 bunch dried bouquet garni
1 package mixed peppercorns
2 cups chopped carrots
2 cups chopped green beans
- Rinse a 1.5kg piece of corned beef silverside and place into a 4.5L slow cooker insert. Add bouquet garni, a few assorted peppercorns and enough water to cover. Cover and cook on high for 4 hr 30 min or until tender.
- Place the meat onto a board, cover with foil and stand for 15 min. Add 2 cups each chopped carrots and chopped green beans to the slow cooker, and cook for a further 15 min while meat stands.
Slice silverside and serve with carrots and beans, accompany with Creamy Mash and a prepared 30g packet of Parsley Sauce.
