1 cucumber or 3 small Persian/ Lebanese cucumbers, ends trimmed
2 garlic cloves, finely chopped
1 tbsp caster sugar
1 tbsp light soy sauce
1 tbsp Chinese black vinegar or rice wine vinegar
1 tbsp chilli oil
Using a rolling pin or cleaver, smack the cucumber so it splits. Rip into 2.5cm pieces, tip into a bowl with all the ingredients and 1 tsp salt, and toss together. Serve alongside the main course.
