Ingredients
300g shortcut bacon rashers
2 large avocadoes, halved
1 tablespoon lemon juice
400g loaf Turkish bread
3 tomatoes, cut into 2cm pieces
200g soft Danish feta, crumbled
Chopped baby cos lettuce and lemon wedges, to serve

Heat a lightly oiled, large frying pan over a medium to high heat. Add bacon. Cook, turning occasionally, until crisp and golden. Remove. Drain on absorbent kitchen paper. Cover to keep warm.

Place avocado flesh in a bowl. Add juice. Season with salt and pepper. Coarsely mash with a fork.

Meanwhile, using a large serrated knife, cut bread horizontally in half. Place, cut-sides up on a large oven tray.

Cook in a very hot oven (240C) for about 4 minutes, or until lightly toasted.

Spread avocado over cut-sides of bread. Top with bacon, tomatoes and feta.

Serve with lettuce and lemon wedges.
TIP For a change, make burgers by replacing loaf with four Turkish rolls. Split, then toast rolls. Sandwich together with avocado, bacon, tomato, feta and lettuce.
