800 g Carisma potatoes, unpeeled, quartered
1 Tbsp extra virgin olive oil
20 g finely grated parmesan
- Put potatoes in a large saucepan and cover with cold water. Cover and bring to the boil over a high heat. Reduce heat to medium and cook, partially covered, for 6-8 minutes or until almost tender. Drain potatoes and set aside to cool.
- Preheat oven to 180°C (fan-forced). Line a roasting pan with baking paper. Use a potato masher to gently press down on potato to squash slightly.
- Arrange potato, cut-side down, in prepared roasting pan. Drizzle with oil and sprinkle over parmesan. Roast for 40-45 minutes or until potato is very tender and golden brown. Serve.
