400 g thinly sliced smoked salmon
½ tsp fresh lemon rind
1 tbsp extra virgin olive oil
1 loaf crusty white bread
1 lemon cut into wedges to serve
¼ bunch fresh dill to garnish
Herbed cream cheese
500 g cream cheese chopped, at room temperature
¼ cup fresh dill chopped (⅓ bunch)
2 tbsp chopped baby capers
¼ cup fresh chives chopped (1 bunch)
2 tbsp lemon juice
¼ tsp ground cayenne pepper
2 tbsp hot water
- To make herbed cream cheese, place cheese in a large bowl. Stir until smooth. Add remaining ingredients. Stir until combined.
- To serve, spread herbed cream cheese over a large serving platter. Arrange salmon over top. Sprinkle over rind. Drizzle with oil.
- Serve with crusty bread and lemon wedges. Garnish with dill.
