3½ cups plain flour
2 tsp mixed spice
1 tsp baking powder
5 Granny Smith apples (750 g), peeled and grated
1½ cups caster sugar
1½ cups sultanas
1 Pinch salt
200 g butter, melted
1 cup milk
2 tsp bicarbonate of soda
- Grease a 12-hole Texas muffin pan (¾-cup capacity).
- Sift flour, mixed spice and baking powder into a large bowl. Stir in grated apple, caster sugar, sultanas and salt.
- Combine butter, eggs, milk and sifted soda in a large jug. Add to flour mixture. Stir with a wooden spoon until just combined. Divide evenly among pan holes.
- Cook in a moderate oven (180C) for about 30 minutes, or until muffins are golden and cooked when tested. Stand in pan for 10 minutes before turning out onto a wire rack.
- Serve warm or cold.
