5 - 6 kg easy-carve whole leg ham (see tip below)
40- 50 whole cloves
½ cup maple syrup
2 tbsp wholegrain mustard
2 tsp Chinese five spice
- Preheat oven to 180 ̊C/160 ̊C fan- forced. Score the fat in a diamond pattern and place cloves at the points of each diamond.
- Combine the maple syrup, mustard and Chinese five spice and season with ground black pepper. Brush about half of the glaze all over the ham.
- Bake for 1 hour or until the ham is golden- brown and glossy, basting with the remaining glaze a few times during cooking. Cool for about 2 hours, or serve warm. You will have plenty of leftovers.
