1 tablespoon Portuguese Chicken Seasoning
1.5 kg whole chicken, cut into 8 pieces
1 onion, diced
1½ cups basmati rice
2½ cups hot chicken stock
- Preheat oven to 180°C (160°C fan forced). Line a tray with baking paper.
- Combine seasoning with 1 tablespoon of oil in a large bowl. Add chicken pieces and toss well to coat. Transfer to tray, bake for 50 min or until chicken is cooked through.
- Meanwhile, heat 40g butter in a large saucepan over a medium heat. Add onion, cook 3 min. Add rice and stir to coat. Add stock, cover and simmer for 15 min or until liquid is absorbed and rice is tender. Remove from heat and stand for 5 min. Serve rice with chicken pieces and garnish with coriander.
