500 g strawberries, hulled and quartered
zest of 1 orange
2 cardamom pods, lightly pounded
½ vanilla bean, seeds scraped
1 star anise
1 black peppercorn, lightly crushed
1 pinch sea salt, optional
¼ tsp ground ginger
¼ tsp cinnamon
1 tablespoon honey
2 cups low-fat natural or vanilla yoghurt
1⅓ cups toasted muesli
- Place strawberries, orange zest, cardamom pods, vanilla, star anise, peppercorn, salt, ginger, cinnamon and honey in a glass bowl and stir well to combine. Cover and chill for 1 hr, overnight if desired.
- Layer the natural yoghurt, strawberries and muesli into four glasses, finishing with berries. Drizzle with some of the juices to serve.
