300 g lean sirloin steak, fat trimmed
1 lime, zested
100 ml buttermilk
1 tsp cider vinegar
1 tbsp chives chopped
1 Romaine lettuce, leaves torn
1 bunch radishes, sliced
- Heat a chargrill pan to very hot. Rub the steaks with a little oil and cook for two minutes on each side for medium. Season and rest while you make the salad.
- Whisk the lime zest, buttermilk, vinegar, chives and season.
- Toss the lettuce and radishes and divide between two plates. Slice the steak and add to the salad, serve with the dressing.
