1 tbsp olive oi
4 fillet steaks (about 125g/4½oz each)
baby leaf salad, to garnish
For The Salsa
juice ½ lime
¼-½ tsp wasabi past
1 mango, peeled, pitted and diced
small handful coriander, chopped
First, make the salsa. In a small bowl, blend together the lime juice and wasabi paste, then toss with the mango and coriander and season with a little salt.
Heat the oil in a heavy pan until hot. Season the steaks with salt and ground black pepper, then add to the pan. Sear for about 2 mins on each side. Reduce the heat, then cook for a further 2-3 mins on each side, or to your liking. Serve immediately with the salsa and salad garnish.
