Sticky Apple Cups

Sticky Apple Cups
Prep: 15 Minutes - Cook: 7 Minutes - Easy - Serves 4

Once cooked, sprinkle over crunchy oat cereal and serve the hot apple cups with a scoop of vanilla ice cream.

Ingredients

2 medium Bramley apples, about 200g each

85g/3oz dried dates, roughly chopped

85g/3oz ready-to-eat prunes, roughly chopped, or raisins

2 tbsp light muscovado sugar

1 tsp mixed spice

zest and juice 1 small orange

0% Greek yogurt or fromage frais, to serve

Method

  1. Halve each apple through the circumference and dig out the core with a dessertspoon from both halves, leaving bowl-shaped hollows behind.

  2. Mix together all the remaining ingredients except for the orange juice and fi ll the apples with the mixture. Fit them into a microwaveable dish and pour the orange juice on top. Cover and cook on Medium (500w) for 5-7 mins until soft. Cool for a few mins before serving with the yogurt or fromage frais.

150 kcalories, protein 2g, carbohydrate 37g, fat none, saturated fat none, fi bre 3g, added sugar 7.6g, salt 0.03g
