½ cup water
½ cup sugar
1 vanilla bean, split, seeds scraped
4 yellow peaches, halved, stoned
Seeds of 1 pomegranate
1 package basil leaves to serve
- Put water, sugar, vanilla bean and seeds in a small saucepan over a medium heat. Cook for 3 minutes until sugar has dissolved. Set aside for 10 minutes or until syrup has cooled to room temperature. Remove vanilla bean.
- Cut peaches into wedges and put in a large bowl. Add pomegranate. Pour over syrup and toss to combine. Top with basil leaves to serve.
