Summer berries with sweet wine cream

Summer berries with sweet wine cream
Cook: 20 Minutes - easy - Serves 6 - gluten-free - nut-free - egg-free

The sweet wine cream is sublime with the berries. Serve with buttery madeleines to soak up the juices. If you can't make your own, buy good-quality biscuits!

Ingredients

750 g mixed summer berries

2 tbsp cassis (optional)

5 tbsp sweet white wine

2 tbsp caster sugar

300 ml pot thickened cream

icing sugar, to serve

Method

  1. Hull or de-stalk the fruits as necessary, then tip into a serving bowl. Drizzle with cassis, if using, and mix together gently.
  2. Measure the sweet wine and sugar into a bowl. Add the cream and whisk with a hand electric whisk until it just holds its shape and flops from the spoon. Spoon into a bowl and serve with the berries.
