1 portion Perfect buttercream icing (see Linked recipes below)
1 bottle yellow liquid food colouring to tint
12 marble cupcakes
½ cup choc bits
12 sugar ladybugs, to decorate
- Put Perfect buttercream icing (see Linked recipes below) in a large bowl and tint pale yellow using 1 drop of yellow food colouring at a time and mixing until desired shade has been reached. Spread top of each cupcake with a small amount of icing until cakes are lightly covered.
- Fit a piping bag with a 1cm star nozzle and fill with remaining icing. Hold nozzle at a 45° angle at edge of a cupcake.
- Squeezing bag, pipe a dot, then pull bag away and stop squeezing to make a petal with a sharp tip.
- Repeat to form a ring of petals. Repeat with remaining cupcakes and icing. Scatter centre of each cupcake with choc bits and decorate with sugar ladybugs.
