Ingredients
1 large sweet potato, peeled and cut into medium-sized chunks
2 medium zucchini, grated
1 teaspoon salt
1 teaspoon cajun seasoning
1 teaspoon pepper
1 cup almond meal
Method

Grease and line large baking tray with baking paper.

Boil sweet potato in a large saucepan until very soft, about 20 minutes. Drain and place in bowl, then mash with potato masher.

Add zucchini, salt, cajun seasoning and pepper to sweet potato and mix well. Add almond meal and mix again.

Form into large potato gem sized pieces and place on baking tray. Bake for 25 minutes in a 200c oven. Serve with tomato sauce.
