Over the past few months, we’ve been over the moon at the news of vegan Ben & Jerry’s, and vegan hotdogs. And now we can bring you the latest news in plant-based eating: a brand new bar in the heart of Sydney’s dining scene.
There’s nothing more fun than some cheeky cocktails with the girls on a Friday night. Tonight, Sydney’s latest cocktail destination opens, revealing a 100% plant-based menu. This is the first Australian venture of renowned US plant-based celebrity chef and restaurateur Matthew Kenney.
The Alibi menu gives locally-sourced plant-based ingredients a creative spin, using smoking, fermentation and molecular techniques. The bar features lounge and bar seating as well as share tables, and is placed in the heart of the Woolloomooloo dining hub.
“The spirit of the menu is very global to show the potential of plant-based food,” Matthew said. “We have dishes influenced by many cultures, but we respect those cultures.”
The menu also encourages share plates. “We think it’s a lot more fun because people get to try a lot more and experiment.”
So, what’s on the menu? Alibi’s signature dishes include kimchi dumplings with sesame and ginger foam, heirloom tomato and zucchini lasagna with pistachio pesto, and Cacio e Pepe with kelp noodles and crispy olives.
The dessert sounds even better. Foodiful is obsessed with cheesecakes, so we’re super excited about the hibiscus strawberry cheesecake with lime curd – delish! There’s also vanilla shortbread and a sorrel gel, deconstructed tiramisu with frozen almond Chantilly, and coconut cream pie.
The cocktail list is also plant-focused, featuring botanicals, fruit and veg. The Enchanted Forest cocktail took the team eight months of research and mixing, and involves an infusion of Portobello mushrooms and absinthe foam made from green apples. Fancy!
Alibi opens tonight, Thursday 22nd March, from 6pm.
