Well, it seems that spring is in the air and there is nothing more inviting on a sunny day than a jug full of bright pink homemade lemonade. The kids will agree, I’m pretty sure.
If you have lemons aplenty (which I do), then this is just an easy way to get the most out of them, at a moment’s notice. You can add soda or mineral water for a little fizz in place of normal water, if you like.
One of the things I love most about using my Thermomix for fresh drinks, is just that: freshness, immediately, with bright flavours, and no real need to stress. You can make drinks to order, no matter who shows up unexpectedly.
I have heard the Thermomix called the best cocktail blender on the market, but I digress. Though now that I mention it…Grown-ups, how about adding a little white rum to this recipe? I think it would work well in this recipe, especially as we move towards summer.
It’s time to enjoy all that pretty in pink!

Pink raspberry lemonade
Makes 2 litres
Prep time: 5 minutes
Total time: 5 minutes
Ingredients:
- 150 g golden caster sugar
- 2- 3 lemons, cut into eighths
- 150 g frozen raspberries
- 2 litres water, plus extra
- ice, to serve
Method:
- Place sugar, lemons and raspberries into Thermomix bowl and chop 3 sec/speed 5.
- Add 1litre water and stir gently 10 sec/Reverse/speed 2. Strain mixture well, reserving solids.
- Return solids to Thermomix bowl and add another litre of water. Stir 10 sec/Reverse/speed 2. Strain and add to first amount of liquid.
- Dilute further to taste and serve over ice.
TIP: You can use sparkling mineral water for some of the water amount, but not all of it, as it will fizz up and spill over the rim of the Thermomix bowl.
