Kelly clarified that the use-by dates on the pavlovas were January 7, January 12 and August 2019.
The find lead some followers to debate whether you could freeze the payolas for future use - or whether the pavlovas with the August 2019 use-by date had in fact already been frozen.
Said one follower: ‘That's weird they have August date cause they only have a shelf life of one month, they are frozen ones and they put date on them once they get them out of freezer.’
Kelly responded: ‘Thats what I thought 🤷♀️ Either way, the ones I grabbed will get eaten!’
Asked another follower: ‘Mmm I wonder if I could smash these and freeze them for messy pav?’
Domestic goddess Nigella Lawson says you can in fact freeze pavlova bases - without any topping - but it can be tricky.
‘The meringue base is quite fragile and so can be damaged quite easily in the freezer if there are other items being put in and taken out of the freezer,’ Nigella advises on her website. ‘Also sugar tends to attract moisture so the meringue can sometimes become a little sticky when thawed, though for a pavlova this is less of an issue as the centre is already quite soft and squidgy.
‘If you do want to try freezing the meringue base then make sure it is fully cold and then put it, still on its baking sheet, into the freezer. Once the base is frozen solid you can carefully remove it from the parchment and baking sheet and wrap it tightly in a double layer of clingfilm (plastic wrap) and a layer of foil before returning to the freezer and freezing for up to a month.
‘To help protect the meringue it is a good idea to put the frozen meringue on a firm base before wrapping it - for example a freezer-proof plate or a round cake board. To thaw the meringue, unwrap it and put it on a serving plate and let it thaw for about 3 hours at room temperature.’
Good advice! Or you could just smash the budget pavs in the next few days, which would definitely happen in our house!
