High school teacher Katie says she embraced meal prep and a healthier lifestyle after suffering from chronic IBS (Irritable Bowel Syndrome) and back problems.
She says: ‘Embracing health and fitness has made such a difference in my life. Not only are my IBS and injuries under control, but I have completely transformed my mind and body.
‘I no longer define my health or my worth by a number on the scale, I don’t count calories, and I don’t allow my weight or dress size to dictate how I feel about myself.
‘I’m the heaviest I’ve been in my life, but I’m proud of my achievements, secure with my appearance and I feel comfortable and confident in my own skin.’
Katie shares her weekly meal prep ideas on her Instagram page, inspiring more than 140k followers with her journey.
‘I love how belonging to this community enables me to share my fitness journey, especially my body transformations and weekly meal preps, because it illustrates that there has been nothing extreme about my approach,’ she says.
'I believe all women are capable of achieving their goals and taking control of their health and fitness simply by incorporating sustainable strategies into their routine, as I have. I will never claim that my approach is the authority on health, or the only way of doing things.

Taking to Instagram to reveal how she scored a week of breakfast, lunch and snacks from the super cheap supermarket for just $35, Katie Lolas reveals how she makes the ingredients into four meals per day.
Sharing this photo of her meal prep to her page, Katie proves that meal prep doesn’t have to be expensive.
‘Your meal prep inspo has arrived 💁🏽♀️,’ she writes. ‘I bought all the ingredients for my breakfast, morning snack and lunch from Aldi and it only cost me $35.00. That’s like $7 per day and my food for the week is sorted ✅.’
