2 x 440g chocolate cake mix
For the filling:
3 cups icing sugar mixture
125g unsalted butter
2 tablespoons malted milk powder
2 tablespoons milk
200g milk chocolate, melted in microwave
For the ganache topping:
400g milk chocolate, chopped
125ml pure cream
8 Tim Tams, chopped
Line and grease two 27cm x 17cm cake trays.
Prepare cake mixes as directed on the packets, and pour into the prepared baking trays. Cook as directed.
To make the filling, in the bowl of an electric mixer, place icing sugar mixture, butter, milk powder and milk. Mix on medium speed until combined. Add melted chocolate and mix again to combine.
To make the ganache topping, place milk chocolate and cream in a microwave-safe bowl and microwave for 20 seconds or until melted. Stir to combine.
To assemble, place one cake on platter and top with filling. Smooth out to create an even layer, using a spatula. Place second cake on top, and top pour ganache over the top and down the sides, using a knife or spatula to ensure all sides are coated. Top with chopped Tim Tams to serve.
