750g beef mince
1/3 tomato sauce
1 carrot, grated
1 brown onion, finely diced
2 garlic cloves, crushed
1/2 cup breadcrumbs
1/4 cup parsley
Salt & pepper to taste
2 sheets puff pastry
Egg wash - two eggs, whisked with a splash of milk
In a large bowl, add beef mince, eggs, tomato sauce, carrot, onion, garlic, breadcrumbs, parsley and salt and pepper. Stir with a wooden spoon until well combined. Set aside.
Place the two sheets of puff pastry side by side, so that the edges are slightly overlapping. Press down where the pieces overlap, to join them together.
Form a log with the sausage mince in the middle of the pastry, going from the widest end to the other widest point.
Fold over one side of the pastry to the top of the sausage mince and brush a 5cm strip on the edge of the pastry with egg wash.
Fold the other side of the pastry onto the log, so it overlaps the other piece of pastry which has been brushed with egg wash.
Place in a 200-degree oven for 45 minutes. Remove from oven when cooked and cut into thick slices, then serve.
