To make them, Katrina says she starts by whipping up a ‘basic cheesecake’ recipe. This involves beating 500g of cream cheese and 1/2 cup of caster sugar together until the mix is smooth. Katrina then adds 200g melted chocolate and 1/2 cup thickened cream and continues to beat for a few more minutes until combined.
Katrina says the recipe works well as one whole share dish or in individual pots or glasses, as she’s done here.
To put them together, Katrina says she places crushed chocolate biscuits in the bottom, then layers of the cheesecake mix, Ice Magic and crushed Kit Kats. She then decorates the top with more Ice Magic, a Flake bar and a Kit Kat finger.

Katrina says she cooked the delicious treat for the young workers at her cattle station, making for some very happy lads!
‘I don’t actually cook for my own children (I don’t have any yet!) but I do cook for our staff on the cattle station in north west QLD where we live - they are anywhere from 17 and up - but I still call them my boys ’

KATRINA’S OTHER VARIATIONS!
Mars Bar
Use white chocolate in the mix and add in half a can of Nestle Top ‘N’ Fill caramel. Sprinkle the top with chopped Mars Bars and drizzle over melted remaining caramel.
Turkish Delight
Use white chocolate in mix and add in roughly chopped toasted pistachios and 1 teaspoon of rose water essence. Spread into glasses or tin, then pour over cooled port wine jelly (that has been made using 1/4 cup less water) and leave to set in fridge.
Choc Mint
Add a drop of green colour and peppermint essence to white choc mix. (Or just the essence to milk choc mix). Decorate with ice magic and roughly chopped choc mint bars of your choice.
Berry
Add a drop of vanilla bean extract to white choc mix. Layer with fresh or frozen berries.
And sometimes Katrina uses melted chocolate combined with rice bubbles for the base, rather than biscuits. Love it, Katrina!
