She writes: ‘Here's the colours I've used and the buttercream recipe, I don't have a 'go to recipe' but I use the calculator below and adjust to my taste and consistency.
‘Colours Gel Colours (I normally get it online but you can get Americolor at Spotlight or Victoria Basement)
‘Red - Chefmaster 'super red' and Americolor 'tulip red' (mixed); Orange - Americolor 'orange'; Yellow - Chefmaster 'lemon yellow'; Green - Chefmaster 'leaf green'; Blue - Chefmaster 'sky blue; Purple - Americolor 'regal purple.’
Sharing her buttercream recipe, Mel says she used 750g unsalted butter softened, 200g Copha softened (didn't have enough butter so use this instead), 950g icing sugar (sifted), 4 tablespoons of milk and 2 tablespoons vanilla extract.
Revealing her method, Mel says: ‘Using an electric stand mixer with paddle attachment or electric hand-mixer, beat the butter and Copha on until pale and creamy (make sure you keep beating til pale and fluffy!)
‘Add half of the sifted icing sugar and beat on low speed. Add remaining sifted icing sugar, milk and vanilla extract. Mix on low, then increase the speed to medium and beat for about 4-5 minutes.’
Mel also added that she used this ‘cake calculator’ to help work out how much icing she needed to make.
Says Mel: ‘I use it for my icing and gives me a good estimate of how much I need. If the cake needs more icing (for decorations) I usually change the cake size and make it bigger.’
Not surprisingly, Mel’s cake got a overwhelming reaction from her fellow Woolies/Coles Mudcake Hacks Facebook friends who were blown away by the creation.
