How do you do it? For Sandy's exact recipe, head here - but basically it involves baking a batch of whole jacket potatoes in their skins, splitting them open and placing them around the edge of a big platter - and then providing heaps of toppings in the centre of the board.
Sandy suggests having a big bowl of hot chilli in the centre, and other toppings can include grated cheese, bacon pieces, sour cream, avocado, fresh salsa, shallots ... anything!
