Tofu soba noodles
Cook: 15 Minutes - easy - Serves 4 - dairy-free - egg-free - pregnancy-safe

Japanese soba noodles and tofu create a simple broth soup that's light and easy to make.

Ingredients

270 g soba noodles

1 L chicken stock

2 cups water

6 cups chopped Asian- style vegetables

150 g tofu diced

1 package spring onions shredded to serve

1 bottle sesame oil to serve

1 bottle soy sauce to serve

Method

  1. Cook 270g soba noodles according to packet directions. Drain, return to pan, cover to keep warm. Pour 1L chicken stock and 2 cups water into a pan. Bring to the boil, reduce heat, simmer. Add 6 cups chopped Asian-style vegetables, simmer for 2-3 min, until vegetables are just tender. Divide noodles and vegies between serving bowls, pour over the stock. Top with 150g diced tofu and garnish with shredded spring/green onions if desired. Drizzle with a few drops of sesame oil and soy sauce
