2 tsps vegetable oil
1 small onion finely chopped
1 bacon rasher finely chopped
1 medium potato cut into 2cm pieces
1 small carrot cut into 2cm pieces
1 litre water
1 cup small spiral pasta
1 small zucchini finely chopped
425 g can condensed tomato soup
125 g can four bean mix drained
½ bunch fresh parsley chopped to garnish
- Heat oil in a large saucepan over a medium to low heat. Add onion and bacon. Cook, stirring occasionally, until onion is soft.
- Add potato, carrot and water. Bring to boil. Add pasta. Boil gently, stirring occasionally, for about 12 minutes, or until pasta is almost cooked.
- Add zucchini, soup and beans. Simmer for about 3 to 4 minutes, or until zucchini and pasta are tender. Season with salt and pepper.
- Garnish soup with parsley.
