125 g butter, melted
1 cup brown sugar
1½ cups plain flour
½ tsp baking powder
½ tsp bicarbonate of soda
2 tbsp cocoa powder
80 g dark cooking chocolate, chopped
80 g white cooking chocolate, chopped
80 g milk cooking chocolate, chopped
- Preheat oven to 160°C. Line 3 oven trays with baking paper. Put butter and sugar in a bowl. Add egg and beat until just combined. Sift in flour, baking powder, bicarb and cocoa. Stir until combined. Then combine chocolate in a large bowl. Mix in chocolate.
- Roll 32 tablespoons of mixture into balls and put 5cm apart on prepared trays. Use back of a teaspoon to gently push down balls to form discs.
- Bake 12-15 minutes or until firm. Cool completely on trays, and serve.
