½ rockmelon (800g)
¼ cup passionfruit pulp
½ cup gin
1 ½ cups apple and mango juice
2 cups ice cubes
2 x 300 ml bottles tonic water, chilled
- Using a melon baller, scoop balls from rockmelon. Divide rockmelon balls and passionfruit among four glass tumblers.
- Pour gin and juice into a medium jug. Stir to combine.
- Just before serving, divide ice among tumblers. Divide gin mixture over ice. Top with tonic water. Stir to combine.
