Tropical summer punch
Cook: 20 Minutes - easy - Serves 18 - Vegetarian - gluten-free - nut-free - dairy-free - egg-free - pregnancy-safe

Summer season mocktail

Ingredients

½ fresh pineapple

1 large mango

250 g punnet strawberries

2 litres apple and mango fruit juice, chilled

1.25 litre bottle dry ginger 
ale, chilled

1.25 litre bottle sparkling mineral water, chilled

Ice cubes and fresh mint leaves, to serve

Method

  1. Peel pineapple. Remove and discard core. Cut pineapple into small pieces. Place in a large punch jug or bowl.
  2. Peel mango. Cut flesh from stone, then cut flesh into 
small pieces. Add to jug.
  3. Cut strawberries into thin slices and add to jug. Refrigerate, covered, until serving.
  4. Just before serving, add fruit juice, ginger ale, mineral water, ice cubes and mint.
