Trout & spelt salad with watercress
Cook: 10 Minutes - easy - Serves 1 - nut-free - dairy-free - egg-free - pregnancy-safe

Throw together ready cooked spelt, smoked trout and steamed broccoli for a nutritious meal that's ready in minutes.

Ingredients

85 g thin-stemmed broccoli

½ orange juice

1 tbsp chopped flat-leaf parsley

140 g ready to eat spelt

140 g hot smoked trout, flaked

large handful watercress

Method

  1. Steam the broccoli for 3 mins until al dente. Mix together the orange juice, parsley and spelt, then top with the broccoli, trout and watercress.
