475g tub vegetable mash
425g can tuna in oil, drained
1 cup packaged dried breadcrumbs
1 egg, lightly beaten
¼ cup drained, finely chopped roasted red capsicum
3 green spring onions, finely chopped
1 tblsp sweet chilli sauce
Salt and pepper, to taste
2 tblsps vegetable oil
315g bag Thai-style salad kit
Extra sweet chilli sauce, to serve
Heat vegetable mash according to packet directions. Transfer to a large bowl and cool for 5 minutes. Add tuna, breadcrumbs, egg, capsicum, onions and sweet chilli sauce. Season with salt and pepper. Mix well.
Divide mixture into eight equal portions. Shape into patties.
Heat oil in a large, non-stick frying pan over a medium heat. Add patties.
Cook for about 3 minutes on each side, or until golden brown. Remove.
Combine salad with dressing and crispy shallots from kit in a bowl. Toss well.
Serve tuna patties with salad and extra sweet chilli sauce.
